Hot to grill top sirloin. Remove the steak from the grill at 125 degrees fahrenheit for rare 130 f for medium rare 140 f for medium or 155 f for medium well. If you re using propane simply light two sections one for each of the temperatures. Set it to the highest temperature that it will go. Keep the grill closed once the steak is on there.
Ideally you should be using a great instant read meat thermometer. Brush the top sirloin fillet with an even mixture of corn oil and vegetable oil to just coat the steak. Top sirloin is not only one of my favorite types of steak but it is also exceptionally easy to grill. The best way to do it is to have two levels of heat.
Coat the surface of the grill liberally with corn oil. If you have the time you can salt your top sirloin in the same way you would to sear it. If you are using charcoal and or wood this might take 30 40 minutes until the briquets are covered in gray ash but propane grills only take a few minutes to get hot. A quick flash on the grill will yield a beautiful medium rare steak that will be the star of your next barbeque.
Aim to have the inside of the grill around 375 f by leaving the cover on as it heats. Preheat a gas grill to the maximum temperature or preheat a charcoal grill for 30 minutes. Add the steaks in a single layer. Leaving the top sirloin steak out before cooking it on the grill for an hour or 2 will help the steak from charring really fast once it hits the grill.
For medium rare cook the steak until the internal temperature is 135 degrees then remove and allow the top sirloin steak to rest for 5 minutes. A top sirloin steak of an inch should not be seared on high heat searing a thin steak will brown the exterior but quickly dry out through the center. The thinner the steak the hotter you want the grill. You want one side of the grill to be at around medium high for searing and browning and the other at a medium low level for cooking the meat through.
Because it s a moderately tender cut with great beefy flavor it doesn t need a bold marinade or heavy seasoning. Pat the top sirloin fillet dry with paper towels to remove any excess moisture. Pre heat your grill to medium high. Flip the steak over and grill for an additional 4 to 4 1 2 minutes.
Rotate the steak again 90 degrees and continue cooking until it reaches your desired level of doneness when tested with a meat thermometer. Once the oven is just a few minutes away from being preheated add the butter and heat until melted. Top sirloin grill temperature is a little nuanced. Pat the steaks dry salt them liberally and allow to chill in the fridge uncovered overnight.
Preheat the oven to 400 degrees f 204 degrees c. Let them come to temp 30 to 40 minutes before preparing them. At the same time preheat a cast iron grill pan on the stovetop over medium high heat about 3 minutes.
